This recipe is an eastern european way to prepare cabbage that can be eaten as a side or main dish
Ingredients:
One head of cabbage (can be more or less depending on your serving requirments)
2 cloves of garlic
3 tbsp tomato paste / sun-dried tomatoes
50ml heavy cream / silken tofu
Parmesan cheese / Nutritional yeast
100ml Chicken / Vegetable Broth
Olive oil / Vegetable oil
Salt
Pepper
1 tsp Paprika
1 tsp Chilli Flakes
Fresh/dried parsley
2 tsp italian seasoning (oregano, thyme, dried basil, rosemary, marjoram)
Instructions:
- Rinse and chop up the cabbage head into wedges (only cut a small bit of stem off to ensure the wedges stay intact), taking care to remove the outermost leaves.
- Dice your garlic or use a garlic press.
- Using an oven safe pan and your chosen oil, sear the sides of the cabbage wedges until they're golden brown (Tip use tongs to remove wedges easily)
- In the same pan place your oil of choice, garlic, seasonings and sundried tomatoes and fry on low heat until fragrant
- Add your broth and cream on low heat, mix slowly until combined (If you are using silken tofu blend your tofu with water 20ml or more)
- Turn off the heat and add in parmesan cheese/ nutritional yeast; mix until melted into the sauce (measure to your preferred taste)
- Add the cabbage wedges back into the pan, place into the oven to bake for 20 mins at 180°
- Remove from oven and spoon sauce over cabbage.
- Top with some parmesan, fresh/dried parsley and enjoy!
