Dandelion & Honey Flatbread

Dandelions are an important source of food for pollinators like the butterflies and bees, please only take as much as you need from overgrown areas! 

Ingredients: 

270g self-raising flour 

250g Greek yoghurt 

1 tbsp olive oil 

1 tbsp honey 

Yellow petals from 10 dandelions 

Instructions  

  1. Pick the heads from each dandelion and place in a bowl of cold water and rinse well.
  2. Remove the petals from the head.
  3. Add the flour, Greek yoghurt, olive oil, petals and honey to a large bowl. (Add olive oil first to coat the spoon in a thin layer, which keeps the honey from sticking to the spoon.) 
  4. Combine the ingredients to form a dough.
  5. Tip the dough onto a floured surface and roll into a ball.
  6. Cut 6 to 8 pieces out of the dough, roll into small balls and flatten to about 1 inch or less thick.
  7. In a dry frying pan (no oil) on medium heat, cook each slice for about 2 minutes on each side (once bubble appears on the top, flip it over).
  8. Enjoy with a sweet or savoury topping, e.g., hummus or hazelnut spread (recipes available on the website).
